Job Description

Job Title: Sr Executive Fermentation & Distillation

About the Function:  

Our Supply Chain and Manufacturing team are problem-solvers, sourcing, producing, and delivering our much-loved brands to delight customers around the globe. Role Responsibilities:

Brewing Operations

  • Execute daily brewing operations as per production plan and SOPs.

  • Ensure efficient mashing, lautering, wort boiling, and wort clarification.

  • Monitor and control critical parameters to achieve target extract, yield, and wort quality.

  • Identify and eliminate process bottlenecks to improve cycle time and throughput.

Fermentation Operations

  • Manage fermentation to ensure stable and timely batch completion.

  • Control fermentation parameters including temperature, pitching rate, yeast health, and attenuation.

  • Prevent sluggish or stuck fermentations, especially during seasonal challenges.

  • Coordinate with Quality/Microbiology teams for yeast management and hygiene.

Distillation Operations

  • Operate and monitor distillation to achieve target alcohol recovery and quality.

  • Ensure stable column operation, correct cut points, and minimal losses.

  • Drive yield improvement and reduction in steam and power consumption.

  • Ensure compliance with excise, safety, and statutory requirements.

Cooling Tower & Utilities

  • Oversee cooling tower operations to ensure required cooling capacity and water quality.

  • Monitor cycles of concentration, chemical dosing, blowdown, and make-up water.

  • Support reduction of water, power, and chemical consumption through optimization.

Effluent Treatment Plant (ETP)

  • Ensure ETP operation in line with Pollution Control Board norms.

  • Monitor influent and effluent parameters and take corrective actions as required.

  • Optimize ETP performance to control operating cost and downtime.

  • Maintain statutory records and support audits and inspections.

Safety, Quality & Compliance

  • Strict adherence to safety standards, SOPs, and permit-to-work systems.

  • Promote safe work culture and participate in risk assessments and investigations.

  • Ensure compliance with quality, food safety, excise, environmental, and statutory norms.

  • Support internal and external audits and closure of observations.

People & Coordination

  • Supervise operators and technicians during shifts.

  • Ensure effective shift handover and documentation.

  • Coordinate with Engineering, Quality, Utilities, Stores, and EHS teams.

  • Support training and skill development of shop-floor personnel.

Continuous Improvement & Reporting

  • Identify opportunities for productivity improvement and cost reduction.

  • Support trials, POCs, and implementation of process improvements.

  • Maintain accurate production, utility, and quality data.

  • Prepare daily, weekly, and monthly operational reports.

Experience / skills required:

  • Strong process understanding and troubleshooting capability.

  • Knowledge of safety, quality systems, and statutory compliance.

  • Data-driven and structured approach to problem solving.

  • Good communication and coordination skills.

  • Willingness to work in shifts and handle operations independently.
