Baileys – the world’s most popular liqueur – was launched in 1974.  Baileys combines fresh dairy cream with Irish whiskey and spirits to create the smooth, indulgent flavour now so popular around the world.

So how is Baileys made?

First of all, we need to source high quality ingredients, and lots of them too.  Baileys uses about 25 per cent of the dairy cream produced in Ireland each year.

The other key ingredient in Baileys is its spirit.  Mellow, triple pot-stilled whiskey and spirit give Baileys its flavour and texture.

The next step is the difficult part, and took four years to perfect.  To blend fine spirits with dairy cream we needed some way to ensure the two liquids won’t separate in the bottle.  This was a big challenge when we first tried making Baileys, but it was solved when we found a way to balance the texture and gives Baileys stability, without adding anything nasty to the mix.  That’s why Baileys never separates in the bottle.
